Preparation

Leave the lentils soaking for approx. 30 minutes. Drain them and cook them over a low heat for 60 minutes in unsalted water.

Lentils are the most ancient legume cultivated by man: rich in fibres, mineral salts and vitamins, they have always been considered the poor man’s meat. They have a high nutritional and energy value and they provide the proteins and vitamins of a complete meal. Lentils are particularly recommended to prevent arteriosclerosis and when regularly eaten they keep cholesterol under control.
