Preparation
Bring a glass of salty water to the boil. Take off the fire, add a table spoon of extra virgin olive oil and pour one glass of couscous. Stir and cover for 5 minutes. Add a knob of butter and separate the grains with a fork.

Couscous is a typical North African food, widely spread in Sicily and Sardinia too. It is prepared with durum wheat semolina and it is usually served as a side dish for stewed meat and boiled vegetables.
